After two years of being closed to the public, the Constantin sugar shack in Saint-Eustache, in the Laurentians, is stormed at lunchtime.
“Let’s say we got bored of that. We were in a hurry to eat a nice little meal with the family. It’s going to be quite pleasant, ”says a customer.
The company’s cooks don’t have time to be idle.
“It feels good. I think the whole team needed that, the smile, the appreciation from the customers. It’s always fun to hear,” says Maxime Constantin, owner of the place.
The only downside: the lack of staff. The labor shortage forced Maxime Constantin to be open only four days a week.
“We will not open at full capacity as in the past. We will reopen maybe at 50%, 60%, 70% of the capacity that we once had, ”he said.
An outing to the sugar shack is also a sleigh ride, games for children, the small farm and the famous maple taffy.
