“The Parliamentarian” is getting a makeover


The parliament restaurant in Quebec got a makeover just before the pandemic while keeping historical elements for the enjoyment of visitors.

Frequented by tourists, the parliamentarian has been opening its doors to everyone for 53 years.

The restaurant is located in the former chefferie of the Parliament Building, converted into a restaurant in 1917, when Lomer Gouin was Premier of Quebec.

“At first we thought we could recover this entire floor for the restaurant (25) unfortunately it was not recoverable ( ) we wanted to keep it’s two elements at the entrance to remind you that the restaurant has a lot of history,” says Anthony Guerra, Director of the National Assembly’s Restaurant Service.

Among the major renovations, a new kitchen was built near the dining room.

“We worked on all the products in the central kitchen on the ground floor, and we took all the dishes up in freight elevators with non-slip bell covers, the big mess, we made downstairs through the caucuses, in the cafeteria it was the mess at the gunshot, now we concentrate we have a place where we really just take care of the dining room it’s you see it in my eyes it’s pure happiness, “says chef Martin Won.

His happiness, serving with his team a boreal cuisine, prepared as much as possible with herbs that grow in the gardens of the Parliament.

“It’s magnificent, it’s a privilege for a chef to have access to all this panoply of things… I get goosebumps just talking to you about it”, says the chef.

It’s not just the food menu that is filled with Quebec products, the drinks as well.

“Our alcohols are 100% Quebec, the beer, currently we have a beer from Gaspésie, we have a lot of Quebec wines that are in the spotlight and each season we change. We want to be a showcase for Quebec products,” explains the assistant manager and maître d’hôtel, Lise Chouinard.

The cost of the renovations exceeded three million dollars.
