The Brunells patisserie (Barcelona) has received recognition for the best coca de Sant Joan chocolate of this 2022. The piece by Miquel Chamorro has captivated the jury for its “intentionality of the round format, the crunchy cocoa crumble, the nuances of the hazelnuts and the fermentation, cooking and taste of the brioche”.

for a coke

  • 135 g of strong flour

  • 22g sugar

  • 1.6g salt

  • 3.5g cocoa powder

  • 3.5g honey

  • 1 egg

  • 14.5g of water

  • 1.5 g orange blossom water

  • 3.5g milk

  • 3.5g yeast

  • 1 ounce butter

  • 1 pinch of grated orange

  1. Work all the ingredients together except the butter and yeast for 15 minutes.

  2. From that moment these two ingredients are added gently so that they are integrated into the dough. Work continues for 10 more minutes.

  3. The resulting mass is separated into two discs of about 150 grams and the chocolate and praline cream is added to one of them.

  4. Once well spread, the coca is closed with the other disk on top and allowed to ferment for 2.5 hours.

  5. Next, it is painted with egg and decorated with the cocoa crumble and praline, and baked in the oven for 9 minutes at 160ºC.
